Cheesy Egg and Sausage Breakfast Casserole

This is one of my family’s all-time favorite breakfast casseroles. Not only is it super yummy but it is very easy to make. You can even prepare it the night before and then just pop it into the oven the next morning to heat up. This would be a great “make ahead” dish for Christmas morning. You can heat this casserole up while you enjoy the fun of opening gifts up with your family. I hope you enjoy it as much as we do.

Ingredients:

8 ounces Liquid Egg Whites

6 large whole eggs

1 Package Jimmy Dean Turkey sausage crumbles

1 cup Shredded Mozzarella cheese

1 Tablespoon olive oil

 

NOTE: You can also add one small chopped onion, diced peppers or even zucchini if your family likes those ingredients in casseroles. I have made it according to this recipe as well as with all the extra ingredients. You can substitute the mozzarella cheese with shredded cheddar or other cheese of your choice. Any precooked sausage you like can be used in this casserole in place of the turkey crumbles.

Directions:

 

In a very large skillet pour the olive oil and coat the bottom of the pan.

 

Next add the sausage sprinkles and saute’ until lightly browned. These are already precooked so you are really just heating and browning the sausage.

 

If you are adding any other chopped veggie ingredients add them to the sausage and saute’ them about 5 minutes.

Now pour the liquid egg whites as well as the whole eggs. Stir the entire mixture gently and slowly until the eggs are fully cooked.

Spray a 9×12 aluminum or glass baking dish with a non-stick coating spray.

 

Pour the mixture from your pan into the baking dish. Generously top with the mozzarella cheese.

 

Cover with foil and bake for about 25 minutes in a preheated 350 degree oven.

 

Serve with sides of bagels or toast and fresh fruit. Breakfast is ready to be enjoyed!
