Summer is in full swing, and I’ve been enjoying the days with family and friends. When you spend the days by the pool or at the park, it’s always nice to have a picnic lunch to take with you.
It’s easy enough to make deli meat sandwiches, but since I’m a vegetarian, I need something for myself too. This is such a simple recipe and it’s easy to make ahead. As a bonus, it’s a crowd pleaser – even for those who typically are carnivores!
Here’s your list of ingredients to gather:
- 1 can chickpeas, drained and rinsed
- 2 stalks celery, chopped
- 1/2 onion, diced small
- 1/4 cup dill pickle, diced small
- 1/4 cup red bell pepper, diced small
- 3 tablespoons mayonnaise
- 1 1/2 teaspoons yellow mustard
- A loaf of your favourite bread
In a small mixing bowl, mash your chickpeas as much as you can. This is a fun process, as those chickpeas can be a bit tricky to pin down at first!
Next, add your diced veggies. I like to cut them finely so there’s an even consistency to the sandwich filling.
After you’ve added your veggies, stir in your mayo and mustard. You can add in salt and pepper as well, for a little extra if that’s your thing.
Now your mixture is ready to go! Spread it over bread and close. It’s quite nice paired with lettuce and tomato on your sandwich as well, but it’s delicious on its own too!
This is my favourite go to sandwich. I make it for picnics, potlucks, and just anytime I want a yummy lunch.
