My Pampered Chef bundt pan is one of my new favorite things, I am giving one to special girls in my life, this year for Christmas!
On this day, I made a Pear Coffee Cake (bundt cake) and had some with my coffee, and took some to share with volunteers and employees at our local dump and re-cycle center.
This is the recipe:
2 1/2 to 3 cups of sugar
one can mostly drained, and ninja blended canned pears
4 eggs
3 1/2 cups flour
2 teaspoons baking soda
1 1/2 teaspoons nutmeg
1 teaspoons cinnamon
1 cup salad oil or olive oil
1 cup nuts (optional)
1 teaspoon vanilla (optional
1) Mix sugar, fruit, eggs first.
2) Then whisk together spices, soda, and flour.
3) Incorporated that dry mixture alternately with the oil.
4) Lastly, add vanilla and nuts if desired.
Bake in oiled bundt pan for 50 to 60 minutes at 300* F.

This recipe looks SO delicious…I have to try this. I think this is a good one to bring along to my women’s bible study group because you can slice the pieces as big or as small as needed. I also like to “Ninja Blend” everything…lol!! Thank you for the recipe, I’ll let you know how mine turns out!
